The kitchen represents one of the main energy consumers in a hotel. Besides cooling, which is operated 24/24, ventilation and lighting is needed intensively. The cooking and dishwashing equipment is highly energy consuming and kitchen staff is usually not trained to follow energy efficient procedures. High energy consuming equipment will be changed rarely because of high costs, so the focus must be on improved operating times, optimised charging of dishwashers and EE cooking procedures.
